A vintage lodging will soon house a new dining experience as Pursuit announced its restaurant, Aalto, will be opening its doors at Pyramid Lake Lodge on June 24.

Located within the majestic Rocky Mountains on the shores of Pyramid Lake, the lodge is the perfect setting for both global visitors and local guests to indulge in an elevated, yet welcoming, dining experience, said Stuart Back, chief operating officer of Pursuit Banff Jasper Collection, in a news release.
The restaurants new menu and atmosphere reflect our commitment to providing guests with an exceptional experience that showcases the best of Canadian hospitality and cuisine.
Located less than a 10 minutes drive from the town of Jasper, Pyramid Lake Lodge is currently being remodeled, with the larger windows expected to not only brighten the interior but also provide a picturesque view of the mountain lake.
Pursuit described the new look as a classic lodge design with a contemporary flare.
The reimagined Pyramid Lake Lodge will include upgrades to the Founders Cabins, meeting spaces and public areas.
There will be 12 stunning new rooms replacing the previous six cabins, all including a king bed, private balcony with lake views and a firepit, Pursuit stated in its news release.
The mountain stay and dining experience will offer guests a refreshed and modern experience while showcasing the natural beauty of its alpine location.
As for Aaltos culinary offerings, its Canadian ingredients will reflect the changing seasons and take inspiration from the lake and alpine surroundings.
Menu items will take inspiration from traditional Nordic techniques, including smoking, salting and fermenting.
Giving a sneak peek of its menu to media outlets on May 28, Aalto showcased starters such as rye brioche, seasonal lamb tartare and Kennebec dumplings, with a land-and-sea charcuterie board to round it off.
For its shared mains, the restaurant served certified angus beef coulotte and B.C. Gindara Sablefish, with a side of fermented barley and seasoned vegetables.
The meal concluded with dark chocolate kladdkaka and semlor buns.
Pursuit noted that it expects Aalto will continue to provide an authentic Rocky Mountain culinary experience, like one of its other Jasper restaurants, Terra, which opened in 2022 and has since been embraced by the community.
Guests can expect to enjoy a relaxed and comfortable atmosphere and have the option of outdoor seating in order to properly take in the surrounding natural beauty.
Aalto will be open seven days a week, serving breakfast, lunch and dinner, and a grazing menu will be available from 11 a.m. to 5 p.m.
